Liberty Tree Tavern Pot Roast Review

New England Pot Roast from the Magic Kingdom’s Liberty Tree Tavern. Recipe found in Cooking with Mickey and the Disney Chefs by Pam Brandon (2004). This item is served during lunch hours on their a la carte menu and is one of the most popular dishes.

I was trying to decide on what to make for an episode of Cooking With Mickey, a how-to video of Disney recipes when I came across this recipe. Growing up in the north with cold winters we always had pot roasts. They are one of those staple comfort foods when it’s cold. I thought this would be a great recipe to do considering at the time fall was just a couple months away.



Disney’s Liberty Tree Tavern New England Pot Roast is really very much like every other pot roast. It has the standard carrots, celery, onions and broth. One difference is that it does call burgundy wine. Some recipes call for this but not most. I like the addition of the wine as it adds a nice depth to the dish. Overall I thought the recipe was really good. The roast picked up the flavor of the garlic, wine and thyme which was nice. The only problem that I found with the recipe was the cook like. It says to back for 40 minutes to an hour. This was clearly not the correct cook time. When removed from the oven at this point it’s cooked but very tough. In order to get that tender, juicy, stick-a-fork-in-it-fall-to-pieces roast it has to be cooked 3 ½ to 4 hours.

I highly recommend trying this recipe but instead cooking it the suggested cook time add another 2-3 hours until it’s tender. If you happen to have a crock-pot you might want to try cooking the roast in it. By using the crock pot you won’t heat up your kitchen (which is great in summer months) and it gives you the freedom to leave your house without fear of a fire. It’s a great time saving and efficient way to prepare a meal.

Did you lower the oven temp when cooking it for 3 hrs
